Fillet is the most prized and most supremely tender cut of meat, making it the perfect choice for an evening with guests. A tender cut of beef is a little bit of luxury and this is the perfect main course to cook for a gathering of friends. It can be roasted as a whole fillet (eg beef wellington) or cut into succulent steaks.The fillet is a muscle which is hardly used by the animal, which makes it the most tender muscle in the carcase. It is the most expensive of all the steak cuts as you only get about 2kg of fillet per animal.
